From the unique limestone coast flint soil, predominantly clone 76, the fruit of the 10-year-old vines was machine harvested in cool evening conditions The juice was lightly settled to remove any heavy pressings, before fermentation with selected yeast strains. The ferments were transferred to French oak barrels where they were aged for 12 months, 15% of these were new.
Tasting notes
Mid straw with a bright clarity.
Peach, Nectarine and lemon fruit flavours complexed with mealy, hazelnut and butter notes. In the background, there is also a flinty, mineral character.
Aromas of sweet French oak, peaches, a touch of wood smoke with a full-bodied creamy texture and flavours of roasted stone fruit, and apple with a good lengthy finish.
