The fruit we select from the Wairau Valley adds brightness, tropical and citrus flavours, as well as tighter acidity.
As soon as the fruit arrives in the winery, the fruit is de-stemmed and gently pressed.
Specially selected yeasts are added to the juice to start fermentation which takes approximately 2 weeks at temperatures between 12°C - 15°C.
Tasting notes
This pure and bright Marlborough Sauvignon Blanc has a vibrant fruit-driven nose bursting with citrus fruits and tropical characters. On the palate luscious layers of passionfruit and guava. Finely balanced with zesty acidity, underlying minerality and just a hint of residual sweetness this crisp and fresh wine leads to a perfectly long, dry, and persistent finish.
